What is your role at Calypso Grill?

I am the Head Chef here at Calypso Grill, my role is to oversee the everyday running of the kitchen. Day to day this will typically include making sure all standards are kept to a high level across all areas, creating relationships with suppliers to ensure we source the best ingredients possible, passing on knowledge and training of the kitchen team and working with the front of house team efficiently. A big part of my role here is working closely with Emily to continuously develop and evolve the menu offering to provide the best possible customer experience.

What do you enjoy the most about working at Calypso Grill?

It's hard to pinpoint one thing I love the most about working here, I love how diverse my role is. I love that Emily is always bringing new and exciting opportunities to me that I can be involved in, it feels like there is never a dull moment. We have achieved some amazing things whilst working together and I'm really proud to have been, and continue to be a part of that.

Tell us more about the produce at Calypso Grill.

The ingredients we get to work with here are second to none and as a Head Chef I feel fortunate to be in a position to work with such quality every day. Working with fish that has only been caught that morning by local fishermen, and comes straight from the boat to the restaurant is so inspiring.

What do you think makes this restaurant and experience unique?

In my opinion, what sets this restaurant apart from others is having the opportunity to try a variety of seafood focused dishes, while being sat in the most amazing location looking out over the water. All of this is provided by a passionate and dedicated team; I feel this makes it a genuinely unique experience.

Tell us what you love about the island?

What I love most about the island is the sense of calm. Whether that’s enjoying a cigar on my back porch looking out to sea, or swimming with nurse sharks, turtles and tropical fish on my day off. It’s the perfect place to relax and unwind after a busy week at work...oh, and the weather isn’t too bad either.
