What is your role at Calypso Grill?
My role at Calypso Grill is Sommelier, so offering guests guidance through our extensive wine list. The Calypso Grill wine list contains wines from all wine producing regions across the world. Many of our guests want to experience such wines but have limited knowledge on certain varieties so what I like to do is ask what it is about certain wines that they enjoy and dislike, helping them to find the perfect wine for their special evening.
What do you enjoy the most about working at Calypso Grill?
For me it’s the atmosphere. Many of my co-workers have been with Calypso Grill since its opening, and everyday we are looking at ways to elevate the service, food menu and the wine list. Everything we do at Calypso Grill is in order to keep our customers coming back.
Do you have a favorite dish
It has to be the Seafood Rundown. If I had to dine in Calypso Grill for three nights of my vacation and I had this dish on the first night I would struggle not to choose it for my other two nights. The dish consists of fresh line caught fish, shrimp, mussels and scallops in a white wine spiced coconut broth.
What do you think makes this restaurant and experience unique?
I have dined in many of the restaurants around the island and nothing really gives me that Caribbean feeling as Calypso Grill does. The fish is fresh straight off the dock from right in front of the Restaurant, and the staff are enthusiastic and energetic.
Tell us what you love about the island?
Everyday you are guaranteed to meet somebody different from all parts of the world coming together for one thing; to unwind on the beaches and experience some of the most amazing wine and food that the Caribbean has to offer. There is no wonder that Grand Cayman is the cuisine capital of the Caribbean.
