What is your role at Calypso Grill?

I am a server at Calypso Grill.

What do you enjoy the most about working at Calypso Grill?

Working at Calypso Grill is special, it is special due to the fact that you are working alongside some of the best professionals of the trade, from back of house to front of house, each one offers a unique gift to their peers and the guests they serve, always something to learn from them.

Do you have a favourite dish?

My favourite dishes depends on the weather, the catch of the day is always fresh and cooked perfectly, probably my go to for most days. When the day is cloudy and rainy I love the fish stew and seafood rundown, I always struggle to decide between the two of them. For an appetiser I love the mango shrimp and cracked conch. For dessert, an espresso martini and a sip of Elisa’s homemade creamy limoncello!

What do you enjoy the most about working with Emily?

I describe Emily as authentic, her personality is transparent through her work, the relationships she has with the team, and through the dishes she creates. She appreciates Calypso for what it is and the story behind what makes Calypso special. Emily works hard to keep the foundations strong and works with great determination to make the best even greater and to deliver the utmost special experience for the patrons that come to visit us year round. Emily balances this intricate line well. That is why I love working with Emily. 

What do you think makes this restaurant and experience unique?

What makes Calypso unique is not only the staff, but the fact that you are part of a story, a story that dates back 25yrs, which is a major milestone for any establishment in this crazy & wonderful industry. As an individual who works at Calypso or a guest visiting, you are part of this rich culture and history. You are writing the future of Calypso and this comes with great responsibility to uphold the standards and philosophy of what makes Calypso Grill the best restaurant on the island, and I am proud to be part of that.

Tell us what you love about the island?

I love the Cayman Islands for the deeply rooted kindness & respect the Caymanians showcase towards us all. As expats we have a responsibility to maintain that relationship and respect, and of course the white sandy beaches are not too bad as well!
